Vegan Paella

Can’t afford a trip to Spain in the near future? You may not make it to Spain any time soon, but you can enjoy the fruits of Spanish culture by making this vegan paella recipe. Of course traditional paella is made with chorizo and saffron, but you can achieve the same color and consistency with this vegan paella by adding turmeric (you can use saffron for a special treat). While I personally recommend not adding a meat substitute, you can always put some tofu in place of the meat. You can even buy chorizo seitan! Happy meatless cooking!



1 cup Artichoke hearts, frozen
4 cloves Garlic
1/2 cup Green beans, frozen
1/2 Italian green pepper
1/2 Onion
1/2 cup Peas, frozen
1/2 Red bell pepper
2 Tomatoes

Canned Goods

4 cups                              Vegetable stock

Pasta & Grains

1 1/4 cups                       Basmati rice

Baking & Spices

1 tsp Paprika, sweet
1 Salt and black pepper
2 tsp Turmeric, powder
